Classic Salsa with a secret ingredient... cumin!
My daughter makes the best salsa I've ever had. No, really, she does!
It's a recipe she got from someone, who found the original in a cookbook. Through the years the original recipe has been tweaked a bit, we use just the greens of the scallions, we blanch the garlic to give it a sweeter, milder flavor, and we use just 1/2 the olive oil called for - but one ingredient has not changed. I remember digging into a fresh batch of this tangy salsa and my daughter proclaiming "It's the cumin that does it."
It is definitely the cumin that "does it" for this salsa...
Classic Salsa:
- 3 medium roma tomatoes, remove most of the seeds and dice
- 2 scallions, green parts only - slice lengthwise then chop finely
- 1 large garlic clove. Blanch 20 seconds in boiling water before mincing
- 1 teasp. cumin seeds toasted until fragrant (3-5 minutes)
- large handful minced fresh parsley
- large handful minced cilantro
- 3/4 teasp. kosher or sea salt
- 1 Tbsp. cider vinegar
- 1/2 Tbsp olive oil
- 1 Tbsp. fresh lime juice
Crushed red pepper or ightly sprinkle cayenne pepper to taste
As each ingredient is prepared, add to a bowl that has a lid that is secure. Once all ingredients have been added, cover the bowl and turn upside down a few times to toss thoroughly.
Chill well, serve with lots of tortilla chips (preferably low sodium and organic
) and expect to find out for yourself, that this is the best salsa you've ever eaten!!!
